This amazing recipe from health food blogger SpamellaB can't fail to put you in the mood for Christmas. Just look at this one, it looks like Christmas on a plate! Check out her blog and social media as they are an excellent source of ways to indulge healthily.

Serves: Makes 8-10 Slices

Ingredients: 

For the base: - 

2 tbsp Smooth almond butter
2 tbsp Maple syrup or date nectar
2 tbsp Coconut oil
1 cup Rolled oats (gluten-free if needed)
½ cup Unsweetened desiccated coconut
Zest of 1 orange
1 tsp Mixed spice

For the topping: - 

2 tbsp Almond butter
2 tbsp Maple syrup or date nectar
1 tbsp Coconut oil
2 tbsp Raw cacao powder
A few drops of orange extract

To decorate: - 

Crushed pecans
CherryActive dried cherries, chopped
Orange zest
Small handful of your favourite granola

 

Method:

  1. First make the base: Place the almond butter, coconut oil and syrup/nectar in a small pan and heat gently to melt. Remove from the heat then stir in the oats, coconut, orange zest and mixed spice until well combined and the mixture sticks together. 
  2. Tip this into a lined 20cm circular tin (use cling-film or greaseproof paper) and spread evenly, pushing up to the sides and making sure the base is covered. Keep in the freezer while you make the topping. 
  3. Now gently heat the almond butter, nectar/syrup and coconut oil for the topping. Remove from the heat and leave to cool for 5 minutes. Whisk in the cacao powder and orange extract to create a smooth, glossy chocolate sauce. 
  4. Remove the tin from the freezer and pour this over to cover, spreading evenly. Now sprinkle over your additional toppings and return to the freezer for at least 4 hours to harden. 
  5. When you’re ready to serve, remove from the freezer a few minutes beforehand, then run a sharp knife around the edges to loosen and remove from the tin. Slice into 8-10 then eat straight away! 
  6. Keep any remaining slices in the freezer for up to 1 month.
