Serves: Makes 12 cupcake sized puddings
Ingredients
1/2 cup Spelt flour
60g CherryActive dried cherries
20g Walnuts
1 tsp Baking Powder
1/2 tsp Ginger
1/2 cup Sugar
Pinch salt
30g Milled chia seeds
2 Persimmons (pulp only)
125ml Milk
1 tsp Vanilla
Method
- Combine the dry ingredients; flour, dried cherries, crushed nuts, sugar, ginger, baking powder and a pinch of salt
- Combine the wet ingredients, persimmon pulp (blended until smooth), milk, vanilla and eggs
- Add the wet mix to the dry and combine
- Place into moulds and bake for 25 minutes at 180C
