This fantastic recipe comes from our ambassador Lindsay Benson aka Lean Bean Nutrition. 

Serves: Makes 12 cupcake sized puddings


1/2 cup Spelt flour 
60g CherryActive dried cherries 
20g Walnuts 
1 tsp Baking Powder 
1/2 tsp Ginger 
1/2 cup Sugar 
Pinch salt 
30g Milled chia seeds 
2 Persimmons (pulp only) 
125ml Milk 
1 tsp Vanilla 


  1. Combine the dry ingredients; flour, dried cherries, crushed nuts, sugar, ginger, baking powder and a pinch of salt 
  2. Combine the wet ingredients, persimmon pulp (blended until smooth), milk, vanilla and eggs 
  3. Add the wet mix to the dry and combine 
  4. Place into moulds and bake for 25 minutes at 180C
