Blueberry Chocolate Coconut Bars

They make the perfect little snack to keep you going through the day!

Serves: 6-8
Prep time: 15 minutes
Cooking time: 0 but 1 hour chill time

Ingredients:

150g Desiccated coconut
4 tbsp Coconut flour
60ml BlueberryActive Concentrate
50g melted Coconut oil
4 tbsp Maple syrup
1 tsp Vanilla extract
Raisins (optional)

 

Chocolate coating: -

4 tbsp Coconut oil
4 tbsp Maple syrup
6 tbsp Cacao or cocoa powder
3 tbsp Buckwheat groats (optional - for extra crunch!)

Method:

  1. Place the desiccated coconut and coconut flour in a bowl.
  2. Pour in the coconut oil, blueberry concentrate, raisins (optional) maple syrup and vanilla and mix well to combine.
  3. Press into a lined tub or tin (20x30cm) and smooth out evenly. Set aside.
  4. Melt the coconut oil then whisk in the maple syrup and cacao/cocoa powder. Stir in the buckwheat if using then pour over the coconut base to cover.
  5. Chill in the fridge for at least 1 hour then remove and cut into 6-8 bars. Enjoy!
